Dough conditioners are technically complex blends of functional ingredients formulated to optimise the development of the dough structure, to facilitate trouble-free production processes and to create highly consistent end-products. – no matter what type of bread or roll you produce.

A good dough conditioner works throughout the bakery process - mixing – dividing and moulding – proofing – baking – slicing – but also during transport and finally when used at home or in catering.

Cereform Dough Conditioners help bakers with three major factors that affect the bread baking performance: first of all, the equipment; it varies from plant to plant and baking performance drifts with age and use. The second factor is people – possibly the least reliant factor, if you have to work with less skilled staff in the bakery. And thirdly, flour, the largest single raw material, with its ever-changing quality and functionality.
